Dawn, besides eggs I usually have a bowl of oatmeal with some fruit in it, or I make a fruit smoothie with yogurt. Hope that helps.

This morning I fixed my breakfast stir fry:

6oz firm tofu (water packed organic)
    6oz cooked sweet potato
    6oz fresh or frozen blueberries
    1/2 tsp cinnamon
1/2 cup of cottage cheese or 1 cup plain, low fat yogurt

spray a saute pan with the cooking spray (the kind without alcohol) and add the tofu cut into bite sized pieces. I let it cook for 5 minutes or so and stir it a few times. Add the sweet potato also cut into bite sized pieces and add enough water to cover the bottom of the pan so it doesn't get too dry. I add the cinnamon and the blueberries and let it cook back down. After it's dished up, I add the cottage cheese or the yogurt - yummy...

    Here's another tofu recipe:

    6 oz tofu
1/2 c uncooked rolled oats, barley flakes, or rye flakes
    1 c yogurt
1 medium apple or pear, diced *
    1 t cinnamon

Mash the tofu with the cinnamon. Soft tofu works best for this recipe, but firm tofu will work as well. Stir in the uncooked grain, yogurt, and fruit.

Serve cold OR you can heat it for 3 minutes in microwave for a different taste. Both are good.

    * Canned crushed pineapple is also good with this recipe. Make sure you get pineapple packed in only in pineapple juice, not packed with any concentrated fruit juice. Concentrated fruit juices are too refined for food addicts, and act as sugar in their bodies, causing cravings.

    1/2 cup oatmeal
1/3 cup cottage cheese or skim milk powder
    1 cup fruit of choice
    2 eggs

mix that up and make muffins, just have to make up the rest of fruit and dairy but its bloody delicious! I try to make up a weeks worth but dont have it every day so I dont get bored! Different fruit helps too!

I believe you can substitute a dairy for a protein like cot. cheese, yogurt, etc. So in other words for bkft. it could seem like you are having two dairies--for instance cereal and milk, yogurt/cottage and fruit or smoothie, etc. or whatever combo you like.

(Unfortunately for me I just found out a couple of months ago I am dairy/casein intolerant and can't find a cottage cheese substitute yet.)

There are recipes to make plain/blueberry or whatever pancakes using oats, cot. cheese and eggs, pumpkin breakfast souffles and all much easier to do than it sounds.

There are muffin recipes and so many other things.

I find bkft. and dinner somewhat versatile...but find lunch really hard... I am going to ask for help with that.

By midafternoon I'm craving and starving! :)

Margot's Mush is one that uses 2 eggs and it's a mixture and different combinations of fruit can be used. I like the frozen blueberries and those mixtures of berries are good also.

1/2 cup dry rolled oats, 1/2 tsp of cinnamon or to taste (or apple pie spice or pumpkin pie spice is also good)
    2 eggs (3eggs for men)
6oz of frozen or fresh berries
1/2 cup of cottage cheese or 1 cup of plain, unsweetened yogurt ( or 1/2 cup of ricotta if you can find the clean ones)

I use a quart size casserole bowl that is ok for the microwave and beat two eggs in it and add the rolled oats and spice and mix well and add the berries on top of it. Microwave on high for two minutes (2.5 minutes for 3 eggs) and I give it a stir and microwave on high for an additional two minutes (2.5 minutes for 3 eggs). I top it with the serving of dairy - quite yummy and it's quick and easy for those mornings that I need to get moving quickly out the door.

Not a bad idea to start your day with protein rich breakfast. Eating eggs everyday can make you feel bored. I may suggest you to include milk, soybeans and dried fruits in your breakfast to make it a healthy diet.

You can also have some fruits like banana and an apple in your breakfast.
