    Favorite Recipes for Breakfast

    Let's post all of our favorite recipes here. Remember to use the portions that are in our current Green Book. Also, let's not forget the men in our program. Put their portions in ( ).

    STRAWBERRY MUSH

    1 c. non-fat plain yogurt
    1 c. cooked whole oats
    6 oz. crushed tofu, drained
    1 c. strawberries
    1 t. cinnamon

    Mixed all together and enjoy.

    Sausage Breakfast

    4 oz. (6 oz.) ground turkey or 4 oz. (5 oz.) pork sausage (make sure this is sugar-free)
    1 c. cooked brown rice
    3 medium plums
    1 c. non-fat or 1% milk, or unsweetened soy milk

    Oat Bran Muffins
    2 med. eggs, beaten
    1/2 c. raw oat bran
    1 c. blueberries
    Bake for about 20 minutes in muffin tins at 350?F
    1 c. non-fat or 1% milk

    Sweet Potato Pancakes 2 (3) med. eggs
    6 oz. cooked sweet potato
    1 t. cinnamon
    (Mix, then fry in pan)
    Top with 1 c. non-fat yogurt* and 1/2 c. applesauce*

    Tofu, Sweet Potato, blueberry Stir fry

    6oz firm water packed tofu
    6oz cooked sweet potato
    6oz fresh or frozen blueberries
    1 cup low fat plain yogurt

    Spray a small saute pan with the clean cooking oil (without the alcohol).
    Cut the tofu into bite size pieces and saute them with a bit of water, if
    the pan seems too dry, and let this cook for ten minutes. Add the sweet potato
    and cut it into bite size pieces also. Add the blueberries and enough water to cover
    the bottom of the pan and let it all cook till the blueberries are soft;
    stir frequently to keep it from sticking to the pan.
    After it's dished up, add the yogurt.

    Quick breakfast meal in a bowl

    I like the breakfast in a bowl - 6oz firm tofu, 1 cup cooked grain, 1 fruit, 1 cup low fat plain yogurt. I especially like cooked millet with 1 cup pineapple bits, 6oz tofu, & 1 cup yogurt

    Favorite Breakfast

    2 poached eggs over 1 cup cooked rolled oats (the long cooking kind), and 1 cup plain low fat yogurt with 1 serving of fruit. I've also had the eggs over brown rice and red quinoa, and that tastes ok also.

    The two poached eggs over a cooked grain is also great for a quick evening meal. Add two cups veg and you're all set.

    I found the red quinoa at the health food store and it needs to be rinsed till the water comes clean to remove the bitterness of the grain. I also like to cook up my grains with a pinch of sea salt per cup of grain to help bring out the natural sweetness of the grain.

    One of my favorite breakfasts is silken tofu, rolled oats, yogurt and fruit all mixed together in a bowl with some cinnamon. Yummy!!!!!

    I also like 2 eggs with 1c millet mixed together and baked in a pie plate. Top with apples and yogurt and cinnamon. Super yummy!

    Mix together:
    6 oz of tofu that I have scrambled in cooking spray with salt and pepper.
    1/2 cup cooked frozen or fresh corn
    2 oz chicken sausage (instead of dairy) I dice it and mix with the tofu/corn mixture
    1 serving of fruit completes the abstinent meal.
    I am fortunate that I have a butcher who makes sausage without sugar
