    pinki's puffed rice delight

    in a bowl mix 1 cup of low fat cottage cheese, 1 cup of black seedless grapes (cut into halves). then lightly fold in 1 cup of puffed brown rice in the mixture and enjoy!!

    pinki's perfect parfait

    items:
    1cup fat free yogurt
    1/2 cup low fat cottage cheese
    1/2 cup blueberries
    1/2 cup red raspberries
    1 cup cooked oat meal

    making the parfait:
    in a tall glass assemble in the following order:
    1/2 cup yogurt, 1/2 cup cooked oatmeal, 1/2 cup blueberries, 1/2 cup yogurt, 1/2 cup cooked oatmeal, 1/2 cup red raspberries, 1/2 cup cottage cheese

    items:
    6oz steamed silken tofu
    1 big pear - finely chopped
    1/2 cup cottage cheese
    1/2 cup of canned corn

    making the delight:
    mash the tofu into a creamy consistency. gently fold the cottage cheese into the tofu. then mix the chopped pear and the canned corn to the tofu and cottage cheese combination...and enjoy...

    items:
    6oz steamed extra firm tofu
    1 cup of diced pineapples
    1/2 cup of cottage cheese
    1 cup of cooked oat bran - in room temperature
    1 tea spoon of cardamom powder

    making the pudding:
    blend tofu, pineapple, and cardamom powder in a blender. gently fold in cottage cheese and oat bran into the tofu-pineapple mixture. refrigerate it at least for 2 hours. enjoy!!

    Savory Breakfast Mix-Up & Smoothie

    4 oz cooked breakfast pork sausage (no sugar) or turkey sausage or ground beef (protein)
    1/2 cup cooked brown rice (1/2 grain)
    1/4 cup cooked (kernel) corn (1/2 grain)

    Fry ingredients up in pan together. Add salt and peeper if desired

    1 cup plain lowfat yogurt (dairy)
    1/2 c orange juice (1/2 fruit)
    1/2 c frozen berries (1/2 fruit)

    Blend together until smooth.

    Thanks everyone for the continued adding on of new and different recipes. I have always liked to try new things, while there were and are other times I just keep it simple. We each have our own needs. Using some of the various suggestions for meals helps me to keep it fresh, inviting, and keep a good rotation of various different foods for each day. In doing this I do avoid using particular foods too much and avoid also creating triggers, that could lead me into a relapse.

    One thing that I enjoy once a week is making the egg salad. I use two hard boiled eggs, chop them fine, add 1/2 tablespoon of clean mayonnaise, and 2 tablespoons of Plain non-fat or Low-fat yogurt as a condiment. Mix together and serve on 3 Lundberg rice cakes. To make a complete breakfast I add one serving of milk and one serving of fruit.

    I have also done this mixture with chicken, tuna, or ham. However my main concern is always that I only use this once in a week. I enjoy it so much that I don't want to abuse it, and while many have a problem with rice cakes I have found that using these guidelines and this brnd of rice cake it works for me. This advise was shared with me by a sponsor. I buy them from the health food store, and do not use the regular grocery store bought brand rice cakes that are highly processed and taste in my opinion like cardboard or styrafoam.

    I tried Margot's mush recipe recently when I had to take the car in for service and was really pushed for time and it was easy and quick and tasted really good. I used frozen berry mix (no added sugar) and topped it with 1/2 cup of cottage cheese. I'm planning to use it on the weekend when my schedule gets switched around a bit.

    add 1/2 cup of raw rolled oats (the long cooking kind) to 2 beaten eggs (and I just used a quart size casserole dish to mix it up in and then used it in the microwave - fewer dishes)
    I weighed out 6oz of the frozen berry mix (Trader Joe's berry medley with cherries) and mixed them in. Microwaved it for 2 minutes on high and then gave it a stir and then another 2 minutes. Topped it with the 1/2 cup of cottage cheese. I forgot to add the cinnamon, I was in such a rush that morning and it still tasted just fine.

    Breakfast drink

    6oz tofu (10oz of tofu for men), 1 cup lowfat milk, 6oz of assorted frozen berries and 1 cup of cooked oat groats. I blended everything in a blender and made this incredible breakfast drink. mmmmmm


    This recipe was on the FAALop and permission was given to add it to the forums.

    Thanks so much for this recipe - I usually enjoy it once a week. Yesterday, instead of the pear for fruit, I made it using chopped apples (gala) and left the skin on the apple, more fiber as well as pretty presentation (yellow white and red) and I really liked the natural sweetness of the apples too. Mine were in the freezer so I did microwave them just a bit first. Yummy!
