I like the "meal in a bowl." 1 cup raw veggie, 4 oz. tuna or grilled chicken, 1 cup of cooked veggies, 1 cup of barley or 1/2 cup beans, and 1 Tablespoon abstinent dressing. Mix it all up and enjoy!

    Something different

I sometimes add a drop of liquid smoke in the water that I use to steam veggies. Also, I love a drop of the liquid smoke in a cup of water, swish broccoli around in it,
drain it and then cook it on a contact grill like a George Forman. Onions are especially wonderful mixed in with this combo. liquid smoke is nice for a change

    Cooked veg

Take a glass 9x13 pan - spray with clean cooking spray. Slice and layer Egg Plant, Yellow Summer Squash, Green Zucchini, Onion, then add garlic and top with two cans of diced garlic petite tomatoes - put Italian seasoning on top - put dish in 350 degree oven and bake for an hour I do not cover it. There will be a little crunch to the onions in the end. For the Normies in my house I put Parm. Cheese on their servings. 1cp= 1cp cooked. Very yummy - you can add 4oz of cooked chicken, your grain (chick peas or canallini beans are nice) and a cup raw veg and you've got a complete meal. I have not frozen this yet - but would bet it would freeze up nice

    Cooked Veg

I like to add a large chopped onion to frozen bags of green beans as they are cooking or to bags of mixed veg w/ green beans, baby carrots, & wax beans - tastes really yummy

    starchy veg recipe

I boil the quinoa in water in my rice cooker with 1part quinoa to 2 parts water. Its best to rinse the quinoa first to remove impurities. After its cooked I fluff it up with a fork & add salt, pepper, chopped fresh Italian parsley & dried cumin, coriander, sage & turmeric. It ends up being a Moroccan flavor which goes well with all meats/proteins
