    Simple Soups

    1) Tomato Soup

    A delicious tomato soup can be had by heating 1 cup of V8 in a bowl or in a mug in the microwave.

    2) Chicken Soup:

    4 oz bite sized pieces of chicken breast or turkey breast
    1 c chicken broth
    1 c steamed vegetables (I like a broccoli, cauliflower & carrots mix)
    ** 1 c brown rice OR 1 c wild rice OR 1/2 c beans OR 1 c steel cut oats OR 1 c hulled barley

    Add a salad with your oil portion as a side for your soup.

    ** Add the grain or beans if having this soup for dinner. If having for lunch, omit grain.

    1 protein, 1 broth, 1 c cooked vegetables, 1 raw vegetables, 1 oil, 1 grain or starchy vegetable (beans

    3) Broccoli Soup:

    1 c milk
    1 c steamed broccoli OR 1 c steamed broccoli and carrots (the carrots add some nice color)
    ** 1/2 c canned corn (or cooked, if using frozen corn)
    spices to taste

    Put the milk into a blender, then add the vegetables. Blend in small "bursts", just enough to chop up the vegetables; don't over blend as this will cause frothiness. Heat the soup in the microwave for 2 to 2-1/2 minutes.

    Add a salad with your oil portion as your side for your soup.

    ** Add the corn if having the soup for dinner. If having it for lunch, omit the corn.

    1 protein (milk), 1 c cooked vegetables, 1 raw vegetable, oil, 1 starchy vegetable

    Detox soup recipe given to me by a nutritionist...

    2 quarts of spring water
    2 cups spinach leaves
    2 cups broccoli heads
    3 cups chopped celery
    2 cups organic red skin potatoes (mostly the red skins)
    1 small zucchini
    1 medium onion
    1 pound green beans
    1/2 teaspoon sea salt
    1 teaspoon paprika

    simmer this for 40-45 minutes It's ok to eat the veg and broth at meals or just drink the broth. It will keep in the refrigerator up to four days.

    Chicken and Zucchini soup

    6 cups water
    2 &1/2 lbs of bone in chicken breast
    1/2 tsp crushed oregano
    1/4 tsp crushed thyme
    1 tablespoon dried onion flakes
    1/2 tsp sea salt
    4 cups sliced zucchini

    Put the first 6 ingredients into a large pot and bring to a boil and then put in the zucchini and turn down the heat to medium and it takes about half an hour for it all to cook after adding the zucchini.

    weighed out 4oz of the chicken and put it into the quart size casserole I use for my soup bowl, added 1 cup of cooked brown rice, 1 cup of the cooked zucchini and 1 cup of the broth and can add a salad or 1 cup or raw vegetable chunks for dinner and the appropriate amount of oil or dressing

    I have a great Gazpacho recipe if you like cold soups.

    1 c. V-8 juice
    1 c. fresh chopped tomatoes, cucumbers, green peppers
    dash of tabasco (or not)
    salt and pepper to taste

    I mix it up in my Magic Bullet, but a blender is fine. If you like you can add some ice cubes to get it cold faster.

    green soups?

    Does anyone have recipes for soup using only non starchy vegs? I tried a kale and buckwheat soup that I thought would not taste all that good that was really good! This has opened me up to wanting to try other green veggies putting my prejudice aside.

    Any kale recipes or greens recipes are most welcome but I am open veg recipes really (as long as it's the non starch ones).

    I tried roasted red, yellow, and orange sweet peppers and bell peppers having no idea that roasting would make them taste so good.

    So now I'm looking for soups!

    Wow.. so many soup recipes. I really like soups so this will help me a lot. Thanks!

    Tuscan Style (Any Time) Soup

    1 cup water
    1 (14-1/2 oz.) can no salt added whole tomatoes, undrained and chopped
    1 eggplant, peeled and cubed (approx. 1-1/4 cups)
    mushrooms (4 oz. can or several, handful fresh- sliced)
    3/4 cup zucchini, coarsely chopped
    1 garlic clove, minced
    1/2 tsp.dried Italian seasoning
    1/4 tsp. salt
    1/8 tsp. pepper
    1/4 cup freshly grated Parmesan Cheese (optional)

    Combine the first 9 ingredients in a large saucepan, stirring well. Bring to a boil; cover, reduce heat and simmer 25 minutes or until vegetables are tender. To serve, ladle soup into a bowl and sprinkle with cheese

    OR.....
    Put all in a crockpot and simmer on low or high depending on amount of time you want it to be ready in.

    P.S. OK...this was taken from the Jenny Craig recipes but FAA appropriate and a family favorite of ours and so easy to make!

    That is an easy recipe. I would surely try it out. Thanks
